The place could easily be called ‘Passion’ since owner Darrin Siegfried’s dedication to wines is the cornerstone of Il Gallo Giallo’s atmosphere. “The eye eats before the mouth,” he says and being in his Hudson Valley wine bar feels like a harmonious bite.
What are their best wines? That depends, what are you eating?
Wine, good wine, is meant to be paired with food and Darrin is an expert on the matter. He’s president of the Sommelier Society of America the nation’s oldest wine teaching organization. “If you really want to learn about wine and not buy overpriced wines, Sommelier teaches that.” However Darrin says, Il Gallo Giallo isn’t about serving the cheapest wines to customers but rather wines that best pair with dishes on the menu.
I sat with Darrin and an Italian bottle Nebbiolo d’Alba to discover what flavors Il Gallo Giallo paired with this Barolo.

The Yellow Chicken – Haha love it! Great place, great food and wine. Your right, the ravioli are so good I could eat them as a dessert, and an appetizer, and an entree! Three courses of ravioli and some of that red wine would do me!
